If they sign up using the built-in SSO options like Facebook, Linked In, or Google, then a single-use code is not required.
Only the users who signed up using the email address will need to enter a single-use code every time they log off.
When you log off, your session ends, and the site will ask for a single-use code to log in.
Do the admins also have to enter a single-use code every time they log in?
The sign-up/log-in process is the same for both admin and non-admin users of the platform.
I would like to go back to using a password, instead of a single-use code. Is there an option?
No. The password option cannot be enabled. You have to use a single-use code to access the platform if you signed up using email.

How do I update the login email address for a user?
Users can now log in with any of the multiple email addresses on their profile. So just add the email address to the user's profile. They will be able to log in with it.
If a user signed up with their work or school email address, and now wants to change it to their personal address, then simply add that email to their profile.
