How To Exclude Posts From Certain Spaces In the Digest?

You can do this from within the admin side of the Spaces listing. Navigate to Spaces on the Admin Panel under Tools:

Now, click on the 'Digest' tab within the Spaces listing and click on the 'Exclude post from spaces' input box.
